Basic Beet Salad
Lettuce turnip the beet! Alright puns aside, beets are my favorite vegetable to add to any salad. Why? Because I find them tasty AND they are healthy too. They contain many vitamins and minerals (Vitamins A, B, C and potassium and iron to name a few) and aide in purifying the blood. When I’ve hit my carb overload I turn to this simple, delicious salad to bring my body back in check. With this mixture of golden beets, cherry tomatoes, avocado, butter lettuce, and an easy to make lemon balsamic dressing, you can’t go wrong. Basically, you can taste the nourishment in every bite! This is the best basic salad ever.
Ingredients:
· 1 head butter lettuce
· 3 medium uncooked golden beets
· 1 cup cherry tomatoes, cut in half
· 1 avocado, ripe, cut into ½ inch cubes
· 1/3 cup olive oil
· 1 ½ tbsp balsamic vinegar
· ½ lemon
· 1 pinch of salt and pepper
Instructions:
· Wash head of butter lettuce, remove leaves from stem and keep large leaves intact
· Place saucepan filled with water over high heat and bring to a boil. Add beets and boil for about 25 minutes
· Remove beets from pan, transfer to a bowl and place under cold running water until cool enough to handle
· Once beets are cool, peel with a vegetable peeler, and cut into half inch wedges
· Place cut beets in bowl and mix with avocado and tomatoes
· Place butter lettuce on the bottom of your serving dish and scoop avocado, tomato, and beet mixture into center of the plate or bowl
· In a separate bowl, combine oil, balsamic vinegar, and squeezed juice from ½ lemon and stir
· Add dressing to salad as desired
· Top your salad with a pinch of salt and pepper
